If you have never made french pastry cream before,then you're in for a treat ! So velvety,so smooth.
Serve 8
Pastry Cream
- 4 egg yolks
- 4 table spoon salted butter
- 1/2 cup granulated sugar
- 1/4 cup corn starch
- 2 tea spoon vanilla
- 1-1/2 cups milk
1.Beat the egg yolks,add the granulated sugar in it. Mix until it becomes thick. Add the corn starch.
2. Microwave the milk. After the milk is hot enough,keep pouring it into the egg yolk mixture and keep stirring ( because you know,you don't wanna make scrambled egg ).
3. Heat a pot on the stove,on medium heat. Pour all the mixture into the pot. Heat it for 3/4 minutes ,but keep on whisking the mixture. DO NOT stop whisking,not even for a single second. After 3/4 minutes it will become really thick and lumpy,that is when you need to turn off your heat.
4. Pour the vanilla into the mixture and whisk it for a minute,until it is completely combined.
5.Now put the butter in a glass dish. And keep a clean sieve on top of the dish. Now pour the whole mixture into the glass dish,through the sieve. This is to get rid off the little lumps from the mixture , that may have occurred.
6.Now mix all of these together.
7.After mixing thoroughly, wrap this in a plastic wrap and keep it in the fridge for 30 minutes.
Dough for the tart
- 2 cups all purpose flour
- 1 cup unsalted butter
- 3/4 cup icing sugar
- 1 egg
- 1/2 tea spoon salt
- 1 table spoon vanilla
1.Mix the egg and butter in a bowl. Add the icing sugar and mix again. Pour in the vanilla. Once these are all well combined, add the flour in it and mix again.
2,After everything is combined properly,scrape them out of the bowl and wrap it with a plastic wrap. You can shape this in a round shape after it is wrapped .Try to make it as flat as possible,which makes it easier to roll after.
3.Now keep it in the fridge for 1 hour.
Now for the tart,sprinkle a lil bit flour on the board where you will roll your dough. And let's get started !
1.Roll the dough,don't make it too thick or too thin either.
2. Now use a cookie cutter to cut little pieces from the dough ,for your tarts. And put the pieces in your cupcake tin.
3.Now grab a fork and apply little holes in the pieces. Now keep them in the fridge for about 30 minutes.
4.After 30 minutes bake them in the oven for 325 F degree/ 163 C degree for 30 minutes.
5.After 30 minutes, take them out of the oven and let them cool down. After they are cooled down,take them out of the cupcake tin. They will look like beautiful brown shells.
6.After they are completely cooled,fill them with the pastry cream. You can fill them with the help of a piping bag or just a regular spoon. I used a regular tea spoon. And decorate them with raspberries or black berries .
